The condition of the water quality around the oyster farm is of absolute importance to the oyster producer.
Our Oysters are produced in class A standard water, i.e. where shellfish register less than 230 faecal coliforms per gram and are therefore permissible for direct human consumption.
Our grade “A” classification waters are regularly tested by the Sea-Fisheries Protection Authority. Our grading and dispatch unit is approved by the SFPA.
On a weekly basis, the Oysters are tested for ASP (Amnesic Shellfish Poisoning toxins) and DSP (Diarrhetic Shellfish Poisoning toxins) by the Marine Institute.
Irish Premium Oysters have two separate sites. The first site is the largest and oysters are grown to near maturity. The oysters are then transferred to a harvesting site. The harvesting site has a river running into it resulting in oysters with a unique sweet taste that has made our oysters famous across the globe.
